There are so many fresh vegetables available in Sri Lanka. Try this recipe using carrots, green beans, beetroot or okra. Serves 4.
Ingredients
¼ tsp turmeric
¼ tsp mustard powder
1 tsp unroasted curry powder *
½ tsp black pepper
1 green chilli chopped
½ onion chopped
2 cloves of garlic
400g vegetable of choice
½ cup coconut milk
1 tbsp coconut oil
* 100g cumin seeds, 100g coriander seeds, 100g mustard seeds, 1 tbsp fenugreek, 2 tbsp turmeric powder, 1 tbsp ground cinnamon, 5 curry leaves, 1/4 tsp cloves, 2 tbsp sweet cumin seeds - ground together
Method
Cook all the ingredients in a pan with the coconut milk until dry
Make a gap in the centre of the pan and add the coconut oil into it
When it gets hot, fry the dry ingredients in the centre of the pan and serve

You will need to be aware that petrol is currently rationed, so that transport can be a bit more expensive than before and driver organised tours need a special permit to allow for additional petrol consumption.
