Dhal is a staple of the Sri Lankan kitchen, made from red lentils and a blend of spices and coconut milk. Serves 4.
Ingredients
¼ tsp turmeric
¼ tsp mustard powder
1 tsp unroasted curry powder*
½ tsp black pepper
1 clove garlic (little)
1 cup red lentils
1 onion, chopped
Salt to taste
1 red chilli finely chopped
Coconut milk
* 100g cumin seeds, 100g coriander seeds, 100g mustard seeds, 1 tbsp fenugreek, 2 tbsp turmeric powder, 1 tbsp ground cinnamon, 5 curry leaves, 1/4 tsp cloves, 2 tbsp sweet cumin seeds - ground together
Method
Mix the spices, garlic and lentils together and cook in water until the lentils are soft
Fry onion and red chilli in oil with lots of salt
Add coconut milk to the dhal to make it creamy
Add the fried onion and chilli and serve

The UK Foreign Office does not currently advise against travel to Sri Lanka and our experience is that Sri Lanka is still a fabulous place to visit. You will need to be aware that petrol is currently rationed, so that transport can be a bit more expensive than before and driver organised tours need a special permit to allow for additional petrol consumption.
