SRI LANKA Puwak Watta

Recipe for Prawn Curry

Using fresh sea or lake prawns, this is our housekeeper's signature dish. Serves 4

Ingredients

Marinade

400g fresh prawns
¼ tsp turmeric
¼ tsp mustard powder
1 tsp unroasted curry powder *
½ tsp black pepper
salt to taste
1 tsp soya sauce
2 tsp coconut vinegar
½ tsp red chilli chopped

 

 

Other ingredients

2 onions chopped

3 garlic cloves chopped

1 young fresh lime leaf

10 cardamons crushed with pestle and mortar and skins removed

3 curry leaves chopped

 

For the sauce

¼ cup coconut milk

 

* 100g cumin seeds, 100g coriander seeds, 100g mustard seeds, 1 tbsp fenugreek, 2 tbsp turmeric powder, 1 tbsp ground cinnamon, 5 curry leaves, 1/4 tsp cloves, 2 tbsp sweet cumin seeds - ground together 

Method

  1. Mix together the ingredients for the marinade and marinade the prawns for 30 minutes
  2. Fry all the other ingredients in a little coconut oil
  3. Add the prawn mixture and fry for 5-10 minutes stirring continuously
  4. Add ¼ cup of coconut milk, bring to the boil and serve
